Niigata Sake

Nada is in the south-eastern part of Hyogo. Nada Gogo is one of the largest sake brewing areas in Japan and has about a 30% share of the sake production market in Japan.  It is the generic name of 5 areas that lie within 12 kilometers between Kobe and Nishinomiya.  The discovery of miya-mizu, excellent quality water for making sake, and the production of rice of high quality has made the name of Nada known throughout Japan.

Goka Sennenju
Junmai Daiginjo – Hyogo, Japan

• Tasting note: Goka Sennenjus Junmai Daiginjo has a delightfully rich body and smooth taste
•  Food Pairing:  Excellent for pairing with fine Japanese cuisine such as sashimi, tofu dishes, and lightly flavored sautéed poultry, beef and vegetables.  Also excellent for fusion and crossover cuisine which uses such traditional Japanese flavors as yuzu citrus, konbu kelp, dashi soup stock and soy sauce.

Fresh and Light
Junmai Namachozo - Hyogo, Japan

• Serving Temperature: Well-chilled
• Tasting note: Made by a brief aging period and pasteurization right before bottling, Fresh and Light Namachozo is characterized by a refreshingly cool aroma and mild taste.
  

• Food Pairing: Excellent for pairing with Japanese pub "izakaya" styled casual cuisine including edamame, tofu (chilled tofu with leek "hiyayakko" and deep fried tofu "agedashi tofu"), deep-fried chicken karaage, gyoza, robatayaki skewers and sashimi. Also excellent for pairing with Asian salads, carpaccio, and spicy sushi rolls.

Hana Kohaku
Flavored Sake - Hyogo, Japan

• Serving Temperature: Well-chilled
• Food Pairing: Excellent for pairing with pork dishes (including pork shabu shabu, hot and sour pork, and sesame flavored yakiniku barbeque) and with desserts (ice cream, sponge cake, and fresh fruit.)

This unique sake is made with a blend of junmai sake and Japanese plum extract.  The plum extract is derived from the succulent nanko variety of plum produced in Wakayama Prefecture.  Mildly sweet with a pleasant citrus like acidity, Hana Kohaku is a refreshing sake excellent on its own or paired with other dishes.

Junmai Taru Sake
Junmai  - Hyogo, Japan

• Serving temperature: Room temperature or slightly chilled
• Tasting note: Made from Junmai sake briefly aged in wooden casks (taru) made from the fragrant Japanese cedar “Yoshi no Sugi”, this is a sake reminiscent of the days when sake was sold from wooden barrels.  Smooth in taste, this sake is elegantly refreshing with a pleasant woody aroma.
  
  Food pairing: Perfect for matching with steamed or stir-fried vegetables flavored with ponzu shoyu (citrus and vinegar flavored soy sauce), tofu, grilled chicken, tsukemono pickles, udon noodles, Asian salads (daikon salad, wakame seaweed salad, sesame flavored carrot and green vegetable salad, etc.) and fresh, lightly seasoned fish.

Kijuro Tokubetsu
Honjozo - Hyogo, Japan

• Alc/Vol: 14.7%
• Rice polishing rate: Ginjo: 60% Honjozo: 70%
• Nihon Shudo (Sake Meter): +3 (dry)
• Tasting Note: made with a 25% blend of ginjo sake and a 74% blend of honjozo sake, Kijuro Tokubetsu Honjozo is refreshingly abundant both in flavor and in taste.
• Serving temperature: chilled, room temperature or slightly warmed
• Food Pairing: Excellent for pairing with both naturally strong flavored ingredients (beef, pork and fish) as well as lightly flavored ingredients (chicken, vegetables and shell fish). Matches well with oden (Japanese stew), grilled salted fish, edamame, steamed asparagus, and negimaki grilled beef and green onion.

Named after an industrious and charismatic member of Hakushika’s Tatsuuma family who was born in the 19th century, this sake is as captivating and refined as Kijuro himself.  Crafted with a brewing method passed down from generations, this is an elegantly balanced sake.

Snow Beauty Nigori
Nigori - Hyogo, Japan

• Tasty note: Velvety in texture with a pleasant fragrance of freshly steamed rice, this nigori sake “roughly filtered sake” is a traditional favorite.  Creamy with a mild sweetness, this sake is deliciously unique.
• Food pairing:  Excellent as an aperitif.  Also a wonderful accompaniment with fine beef dishes such as Kobe beef/ wagyu steak, shabu shabu, and sukiyaki.  Also excellent with mildly hot and spicy cuisine such as stir-fry dishes flavored with Asian chili sauce, bulgogi Korean barbecue, kimchi jigae (kimchi flavored stew), and Thai and Indian curries.

• Tasting note: Mild and dry in taste and with a fresh, fruity ginjo flavor and full body, this is a well balanced sake with substantial character.
• Food pairing: Excellent for pairing with seafood (sushi, sashimi, tuna carpaccio, lobster), poultry (yakitori chicken and mildly flavored duck), and fine beef (Kobe beef and, wagyu steak teppanyaki, shabu shabu). Also excellent with such vegetarian cuisines as soy sauce-sautéed vegetables, chilled tofu, yudofu, and ponzu seasoned appetizers.

Yamada Nishiki Tokubetsu Junmai Genshu
Tokubetsu Junmai Genshu - Hyogo, Japan

• Serving temperature: Well-chilled or over ice

• Food Pairing: excellent for matching with deep soy sauce based flavors (grilled fish, teriyaki dishes, sukiyaki, etc.) Also excellent as an aperitif.

Made with locally-produced premium sake rice “Yamadanishiki”, Yamadanishiki Tokubetsu Junmai Genshu has an elegantly rich aroma and intense taste.  This genshu “undiluted sake” is bottled without the water addition typical in most sakes.  With a fresh “right after fermentation” fragrance and dry character, this sake is best enjoyed well-chilled or over ice.  Awarded the 2011 Monde Selection Grand Gold Medal in Brussels.

• Tasting note: with a fresh and fruity ginjo flavor, slightly dry taste and full body, this is a well-balanced sake with substantial character.
• Food pairing: Excellent for pairing with seafood (sushi, sashimi, tuna carpaccio, lobster), poultry (yakitori chicken and mildly flavored duck), and fine beef (Kobe beef and wagyu steak, teppanyaki, shabu shabu). Yamada Nishiki Junmai

• Tasting note: Brewed with the best of all sake rice varieties, locally-produced Hyogo Prefecture Yamadanishiki, this sake exudes a character and taste like no other.  Junmai Yamada Nishiki is carefully crafted to bring out the rice’s most delicious aspects (“umami”) while creating a delicate balance between a full body and pleasantly mild dryness.
  
• Food pairing: Excellent for pairing with fine seafood (sashimi, grilled fish, prawns), fine beef (Kobe beef and wagyu steak, teppanyaki, shabu shabu), soup and simmered dishes (nabe hot pot, seafood soup, simmered vegetables in broth stock).

Chokara
Junmai - Hyogo, Japan

• Tasting note: Chokara Junmai is a distinctly dry sake with a sharp and refreshing finish.  With a full body typical in the finest junmai sakes, Chokara Junmai is a pleasant compliment to bolder flavors.
• Food Pairing: Excellent for pairing with nigiri sushi, makizushi rolled sushi, katsu breaded and deep fried recipes (tonkatsu pork cutlets, prawns, mushrooms), Japanese style wafu hamburger steak, gyoza, ramen, and robatayaki grilled dishes.
